Fresh Fridays: Grilled Shrimp with Balsamico

Give your tried-and-true recipes a Mediterranean makeover by adding new flavor accents.  Balsamic vinegars, spices, herbs, peanuts and nuts all add an extra zing, turning your everyday meals into Mediterranean Magic.  Coat a plain chicken breast with spices, and cook in a little olive oil. Add a few chopped nuts and herbs to brown rice, to make an interesting pilaf.

Or let’s say one of your favorite standbys is shrimp. In the recipe below, a few tablespoons of balsamic vinegar add an unexpected layer of rich flavor – and how can you argue with a four-ingredient recipe? The best part is, a jar of herbs or a bottle of special oil or vinegar lasts for week after week of Mediterranean makeovers.

Grilled Shrimp with Balsamico

*serves 4-6 people*

Ingredients

  • 6 tablespoons olive oil
  • 2 1/2 pounds medium shrimp (cleaned, peeled and deveined)
  • Salt and freshly ground black pepper
  • 3 tablespoons balsamic vinegar

Preparations

  1. Heat two tablespoons Extra Virgin Olive Oil in large non-stick frying pan over medium heat.
  2. Place shrimp in pan and grill for 8 minutes without turning, shake pan gently every so often. Add salt and freshly ground pepper.
  3. Turn shrimp and grill another 7 minutes, sprinkling with 1 tablespoon of olive oil and adding more salt and pepper if desired.
  4. Remove pan from heat and pour 1 tablespoon of balsamic vinegar over shrimp; allow it to evaporate.
  5. Whisk remaining olive oil and balsamic vinegar together until creamy. Place shrimp on a warmed serving dish. Pour mixture over shrimp.
  6. Let stand 2 minutes and serve on individual plates, spooning sauce from large serving dish and, if desired, add additional balsamic vinegar.
